Origin of the corn meal pudding recipe
The international corn meal pudding recipes are usually very compact and sometimes hard to eat due to the consistency. The Austrian version is very fluffy with fruit topping.
When I was young my mother made it and once I was grown up i discovered this fabulous recipe again. It is a very simple recipe and take less than 60 Minutes until it is ready to eat! ideal for hungry kids, waiting for the dessert.
Before you start with the corn meal pudding
- Make sure you have all ingredients at home, also make sure that you use high quality, maybe organic ingredients, it will pay off in the final taste!
- I use a tart form, but you can use any other form as well. The advantage of the tart form is that the surface can nicely be decorated with fruits.
- Two hours before you start with the cooking, take all ingredients out of the fridge. This will ease the preparation will make the dough fluffy and will save energy when putting the ingredients with room temperature into the oven.
- You can use any fruits you like, but i prefer fresh fruits from the current season. During the winter season you can also use any frozen fruits that you can place immediately on top of the corn meal mass.
Corn Meal Pudding – Detailed Description
Make the corn meal mass
Place the butter with room temperature in a large bowl and whisk the butter until it gets fluffy.
Add the eggs and sugar and whisk again until everything is well mixed.
Now add the cottage cheese, the lemon and the cornmeal and stir until all ingredients are well mixed.
In case you have no kitchen machine as shown in the image, you have to do it by hand. In this case count around 10 Minutes longer to whisk everything together.
Fill the baking form and bake
Fill the cornmeal mass into the tart form and smooth the surface before adding the fruits you have available.
You can use raspberries as shown in this image or any other berries as shown in the image below.
Place the tart form with the corn meal pudding mass into the pre heat oven. Place it in the middle of the oven and watch it from time to time.
Depending on the form you are using the baking time could be a bit longer in case you are not using a flat tart form as shown in this recipe.
Enjoy the Austrian Corn Meal Pudding
We usually cannot wait until the corn meal pudding comes out of the oven, so we just add a bit of icing sugar on top and eat it hot.
But the taste and the fluffy consistency stays even when you keep it in the fridge for a couple of days.
Try other berries as well as the berry mix on the left hand side. You can also replace te fruits with vegetables and can make a spicy form of the corn meal pudding.
