Carrot juice the healthy & tasty drink

Carrot juice delivers vast amounts of vitamin A, C, calcium and other necessary vitamins. Especially carrots are rich on folic acid and smaller amounts of B vitamins, biotin, vitamin E. They have calcium, magnesium, chlorine, phosphorus, sodium and small amounts of copper, iron and zinc.

Carrots get their color from antioxidants called carotenoids, one of these carotenoids is beta carotene. Many studies have shown that beta carotene is crucial for improving immunity in the body and protecting skin and eye health.

Bust most important it is a very refreshing drink for the summer, especially when you mix it with lemon and soda water as shown in this recipe.

Before you start with the carrot juice

  • Make sure you have all ingredients at home, also make sure that you use high quality, maybe organic carrots, they are more healthy and have a fresher taste.
  • In my recipe I use a juicer hence it takes very little time. As alternative you can use a food processor and process the carrots until chopped and mashed.

Important scrub the carrots first with fresh water and a vegetable brush. Cut of the broader end, where the carrot was attached to the green. In case you have not used organic carrots or when you are concerned about pesticides you should peel the carrots.

Depending on the carrots you might get more or less juice out of them. The juicer separates the juice form the dry carrot pieces which can be perfectly be used for the carrot cake.

When you have processed all carrots though the juicer than add the lemon juice and some vegetable oil. Without oil our body cannot absorb the vitamin A and vitamin E.

Personally I like the carrot juice fresh directly after adding the sparkling water to it as it gets a nice foam on top.
